INGREDIENTS
4 cups roasted yellow squash
3 eggs
1 cup milk
1 cup (4 ounces) shredded cheese (optional)
DIRECTIONS
Preheat oven to 350 degrees.
Lightly
butter an 8 x 8 baking pan.
Place squash in prepared pan.
Beat together
eggs and milk until completely mixed.
Pour over squash, place in oven and bake 20-25
minutes until custard is set.
Top with cheese
and bake until cheese is bubbly.
Refrigerate leftovers.
